- 2 lbs sliced beef (roughly 1/4 inch thick, 2 inch wide, as long as possible)
- 1/2 cup yogurt
- 4 tbsp ginger-garlic paste
- 1/2 cup green papaya paste (with skin)
- 1 tbsp lime juice
- 1/2 cup mustard oil
- 1 tbsp paprika
- 2 tbsp salt
- 1/2 cup finely crushed fried onions
Instructions to make Sheek (Bihari) Kabab
- Lightly toast all ingredients in the "Spice mix" section, cool and grind to fine powder.
- Mix the ground spice mix from Step #1 with all ingredients under the Marinade section, except the beef, to a smooth paste.
- Coat beef slices with the marinade and spice mix in a bowl, cover and refrigerate for at least overnight or up to 24 hours.
- Set beef slices tightly on metal skewers in a zig-zag pattern, keeping each skewer at or less than 2 inch thick.
- Grill skewers 3 inches over well-lit charcoal, turning occasionally until surface of meat is slightly charred (usually about 20 minutes).
- Take cooked kabab out of skewers and serve topped with sliced onions.
