Here is my inspiration from Chef Siddharth's challenge. I tried to create a whole new dish by making fusion of Continental and Awadhi cuisine. I tried to use most of the ingredients from the video. I made a creamy korma gravy and served it with grilled fish and rosti accompanied with green arugula salad.

Ingredients and spices that need to be Prepare to make Grilled Fish with Awadhi Creamy Potato, Veggie Rosti & Greens:

  1. Grilled Fish
  2. 100 g Fish
  3. to taste Salt
  4. to taste Black pepper
  5. 1 tsp olive oil
  6. Awadhi Creamy Potato
  7. 2-3 Potato diced
  8. 2 tbsp Oil
  9. 1 tsp Cumin seeds
  10. 1 Mace
  11. 1 inch Cinnamon stick
  12. 2-3 Green Cardamom
  13. 2-3 Clove
  14. 1 Bay leaf
  15. 1 tbsp Butter
  16. As required Milk
  17. 5-6 Garlic
  18. To taste Salt
  19. 1 inch Ginger
  20. 2 no Chopped Onion
  21. 10-12 sauted Cashew nuts
  22. 1 tsp Cumin powder
  23. To taste Black pepper
  24. 2 tbsp Cream
  25. Veggie Rosti
  26. 1 shredded carrot
  27. 1/2 cup shredded Cabbage
  28. 1/2 capsicum juliennes
  29. 1/2 red bell pepper juliennes
  30. 2 boiled mashed potato
  31. 1 tbsp corn flour
  32. 1 onion slice
  33. 2 tbsp butter
  34. 2 tbsp sunflower oil
  35. To taste Black pepper
  36. To taste Salt
  37. Greens
  38. 1 cup Arugula leaves
  39. 1 tbsp caramelized onions
  40. 2-3 cherry tomatoes
  41. 1 tbsp Salad oil
  42. to taste Salt
  43. To taste Black pepper
  44. Other ingredients
  45. As needed Micro greens
  46. As needed Olive oil

Steps to make Grilled Fish with Awadhi Creamy Potato, Veggie Rosti & Greens

  1. Grilled Fish: Season the fish with salt and pepper, drizzle oil, coat it and grill from both sides.
  2. Awadhi Creamy Potato: Saute the Potato cubes till golden brown and keep aside.
  3. Heat oil in a kadhai, add cumin seeds, cinnamon, cardamom, mace, clove and saute for 30 seconds.
  4. Add onion, ginger, garlic and saute for around 10 minutes.
  5. Make a smooth paste of cooked onion mixture and sauted cashew nuts.
  6. Heat butter in a kadhai, add the blended paste and cook in low medium flame for 10-12 minutes. Add milk in between to set the consistency of gravy.
  7. Put the sauted potato dice and season the gravy and add other powder spices. Cook for 4-5 minutes and finish with cream.
  8. Rosti: Take all the ingredients (except butter) of Rosti in a bowl, give it a well mix. Make small patties and shallow fry in tawa using butter till brown crispy texture.
  9. Greens: Take a bowl put arugula, seasoning, cherry tomatoes, caramelized onions and salad oil, give a nice mix with light hands.
  10. Assemble: Place Rosti in the center of plate, put greens on top followed by Grilled fish. Pour the Awadhi Creamy Potato around the Rosti and drizzle olive oil on the sides of creamy sauce. Garnish with micro greens.
