Baba ganoush--means pampered father - The literal meaning of baba ganoush or baba ganouj is "spoiled dad," referring to the fact that when you eat it, you just can't help but feel a bit spoiled!!!
it is a smoky, rich and creamy eggplant dip or starter which is traditionally made by mixing tender roasted (or charred) eggplant and nutty tahini with garlic, citrus and spices.

Ingredients and spices that need to be Prepare to make Baba Ganoush:

  1. 1 small eggplant
  2. 1 tomato
  3. 2 green chillis
  4. 2 tsp Tahini paste
  5. 3-4 fresh garlic cloves
  6. 2 tsp lemon juice
  7. 2 tsp olive oil
  8. 2 tsp black pepper powder
  9. 1 tsp red pepper flakes
  10. Salt as per taste
  11. Garnish : spring onions
  12. Serving: pitta bread

Instructions to make Baba Ganoush

  1. Grill the eggplant whole over an open flame over medium-high heat, turning occasionally, with a pair of tongs, until the eggplant has fully charred on the outside and the flesh has collapsed and softened.
  2. Put the cooked eggplant in a colander and using a knife, open it up a big so that it will cool quickly and drain its juices. Push down on the eggplant with the back of the spoon so that any excess water will drain well. Also roast tomato n green chillis.
  3. When cool enough to handle, peel the charred skin off the eggplant and the stem and discard. Now transfer it to a large bowl. Add in the tahini, minced garlic, fresh lemon juice. Season with a good pinch of salt, black pepper powder and red pepper flakes.
  4. If you have the time, cover the baba gnoush and chill it in the fridge for a few minutes or sit it aside while you work on something else.
  5. Spread the baba ganoush on a serving rimmed plate or bowl and drizzle with a good bit of extra virgin olive oil. Finish with toasted pine nuts and fresh parsley or spring onions. Serve it with pitta bread. Here I have served with brown bread.
